Tomato Steamed Fish

Hi ChoxChe-ers. Today we are going to make the simple and basic tomato steamed fish. I am using selar fish for this dish, but you could choose other types of fish to your liking. Without further ado, let's get started!

Ingredients:

1. Fish, 460 g.

2. Tomato

3. Garlic

4. Ginger

5. Salt

6. Fish Thai sauce.

Instructions:

1. Using the sharp knife, scale off the fish on both sides from tail towards head.

2. Insert the knife into the middle of the body and draw a line towards the head.

3. Reach in the abdominal cavity and pull out the entrails.

4. Once you removed the organs, you will be able to see the veins running along the backbone. Remove this too.

5. Clean the inside thoroughly under running tap water.

6. Make a couple of diagonal incisions at both sides and stop once you reach the backbone. This incision allows the fish to cook and absorb the seasoning easily.

7. Chop the garlic cloves in any sizes and shapes you like. I prepare two kinds: bigger-sliced which I am gonna put at the base and smaller-minced garlic as garnish on top of the fish.

8. Like the garlic, I prepare two shapes of gingers too: thinly-sliced coins shape and julienne matchsticks shape.

9. Cut the tomatoes to wedges.

10. Rub all of the fishes on both sides with one to two pinches of salt.

11. Arrange the bigger-sliced gingers and garlic at the base. The pungent smell of these herbs will penetrate deep into the fish, creating an aromatic fish meat.

12. Garnish the fish with the julienne ginger, finely-chopped garlic and tomatoes wedges. Tomatoes are naturally sweet, thus you don't need to add sugar for this dish.

13. Add a little amount of fish Thai sauce to enhance the taste. Don't add too much as you have rubbed the fish with salt earlier on. You can omit this step if you want.

14. Steam under medium heat with the cover on for 20 to 25 minutes.
