Stirred Fried Egg Tomatoes

Hi ChoxChe-ers. Today we are going to make the easy peasy lemon squeezy Stirred Fried Egg Tomatoes! This is my favourite and you should seriously try to make it! Let’s get started!

Ingredients:

- 2 cut tomatoes

- minced garlic

- 1 teaspoon of corn flour that has been mixed with 1 teaspoon of water

- 4 bitten eggs

- 1 tablespoon of sesame oil

- a sprinkle of salt

- half teaspoon of sugar

Instructions:

1. Sprinkle a pinch of salt into the bitten eggs.

2. Sautee garlic with sesame oil until aromatic.

3. Add all the cut tomatoes.

4. Sprinkle half a teaspoon of sugar.

5. Cover to let the tomatoes cook. This will take 3-4 minutes under medium heat. Once you open the lit, you will be able to see the juices coming out from the tomatoes.

6. Add the corn flour and water mixture.

7. Add in the seasoned bitten eggs.

8. Leave it undisturbed for 30 sec to 1 min under medium heat.

9. Gently mix the egg until you get the texture you like.

10. Serve to plate.
